Milk-Free Almond Roca

This is a bark-like version of almond roca, not the bite-size nugget version.  It’s delicious!  We’ve always made it with Hershey’s chocolate, but I tried it with a dairy-free (cocoa-butter-only) Dark Chocolate Bar as a replacement.  I tried to pick the dark chocolate with the lowest cacao percentage that I could find. This was 72%.  This recipe was not super easy for me after several years in hibernation. I burnt...

Dairy Free Peppermint Bark

Almond Bark is also dairy/lactose free.  We always made peppermint bark as a part of our Christmas goodies with Mom because it’s so easy!  Sometimes, I enjoy beginning with a layer of chocolate almond bark for thickness.  We always double (or more!) this recipe.  This year, I didn’t add that layer of chocolate first, and I also added a dash of peppermint extract once it was melted. It was delicious! Ingredients...

Gluten Free Mexican Wedding Cookies

One of the neatest things about being married is making new memories. I also don’t remember making these cookies for our Christmas goodies with my family when I was growing up.  But, they became part of our new family tradition. I think I googled this recipe for Francisco and I’s first Christmas together while we were dating.  I’m not sure why I wanted these (maybe because they’re called Mexican Wedding...

Gluten Free Snickerdoodles

I found this recipe online, and it says it’s from Martha’s holiday cookies 2005. I adapted for Gluten Free.  These are one of Francisco’s favorite cookies – I think it’s because of the cinnamon!   The recipe makes 20-40 cookies, depending on how large or small you form your dough balls. Also, if you make more cookies rather than fewer cookies, you may need to make more of the cinnamon sugar...

Gluten Free Lactose Free Candy Cane Cookies

These Christmas Cookies I don’t remember making as a child.  I think I started making them because maybe my aunt makes them and I wanted to find the recipe, or I tried them somewhere and went looking for it.  Peppermint is one of my favorite flavors.  I adapted the Betty Crocker recipe I had on hand to be gluten-free and lactose free.  It’s also easy to prepare ahead of time...

Gluten Free Dairy Free Molasses Crinkles

I enjoy these cookies for the holidays because of the mix of spices–cinnamon, ginger and cloves.  But really, they are one of my favorites any time of the year. Molasses Crinkles are thick, chewy cookies with crackled sugar tops.  They’re great with a cup of cold (Lactose Free) milk.  I’ve adapted this Betty Crocker recipe that we always used when I was growing up to be gluten-free.  Shortening is lactose/dairy...
