GF LF Stuffed French Toast

My favorite thing pre-chronic illness was Stuffed French Toast at the Best Western University Inn in Moscow, ID.  I would have it almost every time I went there, and especially on my birthday.  This dish is not for people on a sugar-free diet. While you can make it gluten and lactose free, it’s full of fat and calories.  Once I found a Lactose Free Cream Cheese, I was in business!...

Milk-Free Almond Roca

This is a bark-like version of almond roca, not the bite-size nugget version.  It’s delicious!  We’ve always made it with Hershey’s chocolate, but I tried it with a dairy-free (cocoa-butter-only) Dark Chocolate Bar as a replacement.  I tried to pick the dark chocolate with the lowest cacao percentage that I could find. This was 72%.  This recipe was not super easy for me after several years in hibernation. I burnt...

DIY White Christmas Ornaments

My tree was looking a little bare.  When we bought our tree and ornaments several years ago, I was going for a red and silver theme, with the majority being red.  After I decorated our tree downtown last year for the Festival of Trees to accept Francisco postcards, I switched to a burlap, raffia and silver theme. I really wanted to add to the tree, and because our angel on...

Craft Paper Gift Wrap

Christmas is my favorite time of year. I love listening to Christmas music, baking Christmas goodies, giving gifts, all of it. One of my fondest memories is wrapping packages with my Grandma Bea for hours in her basement. This year, I had so much fun wrapping presents and I am very happy with the way the look of the gifts turned out that I had to share what I did....

Gluten Free Rolls

My biggest triumph in the kitchen this Thanksgiving was making myself my own gluten-free dinner rolls.  After trying several versions of bread dough with my mom over the summer, including several epic fails, we finally found a recipe that was not just edible, but downright delicious. She even said they were “the bomb!” They were easy to make and I’m looking forward to making them again soon to compliment our...

Paddle Boarding on the Palouse

Aside from updating our yard and growing a vegetable garden and herb garden, Francisco and I have been paddling fools!  We tried Paddle boarding for the first time while spending Mother’s Day weekend on Hat Island with my mom. We fell in love almost immediately and have been hooked ever since! We invested in our own pair of portable Red Paddle Boards.  Francisco picked out our boards so that we...
