GF LF Cranberry White Chip Macadamia Nut Cookies
White chocolate is something else I had missed so much, and I just love making White Chip Macadamia Nut cookies for Christmas. I found some awesome lactose-free white chocolate chips online to make this recipe. In addition to adapting for gluten-free, I also added Craisins to make them extra special for the holidays.
1 cup butter, softened
1 cup granulated sugar
¾ cup brown sugar, packed
2 teaspoons vanilla
½ teaspoon salt
2 ½ cups GF Flour
1 teaspoon baking soda
10 oz. DF/LF white chocolate flavored chips (chunks, or bars cut into chunks)
1 cup macadamia nuts, chopped into chunks
1 cup Craisins
Beat butter, sugars, vanilla, and salt until creamy. Add eggs, beat well.
Gradually add in flour and baking soda, beating until well blended.
Stir in white chocolate chips, nuts, and craisins.
Preheat oven to 375⁰F. Drop dough by the teaspoon onto cookie sheet. Bake 8-10 minutes or until set. (Edges will be golden brown, center will be set). Cool slightly. Remove from cookie sheet to wire rack to cool completely.
